Veraison: The Onset of Ripening

It’s the time of year when our grapes start to change color! This process, known as veraison (a French term for the onset of ripening), is one of the more exciting times in the vineyard. Veraison is also known as berry softening and indicates that harvest is only 30 to 60 days away!

Here in NH, veraison can take place anywhere from late July to mid-August depending on the variety and weather. Grape vines transport energy stores from their roots to the grape clusters. Sugar levels – in the form of glucose & fructose – begin to rise and acid levels fall. Berries increase in size, grow plump, and change color. Most noticeably, red grapes will turn a blush pink and eventually deepen to red. White grapes, on the other hand, will become more golden and vaguely translucent. While our Valiant are the furthest along, Marquette aren’t far behind, and more varieties are soon to follow!

It’s around this time that grapes begin to develop their aroma and flavor compounds. Especially in the heat of summer, you might notice a sweet scent while walking out in the vineyard and increased bee activity. Birds and bees LOVE ripe grapes so it’s also an indication that it’s about time to put up our bird tape to keep our grapes from being eaten before it’s time to harvest.
